Ingredients

Protein & Vegetables:

  • 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 medium zucchini, chopped into half-moons
  • 1 bell pepper (red, orange, or yellow), chopped into 1-inch pieces
  • 1 cup baby Bella mushrooms, halved
  • 1 small purple onion, chopped into 1-inch pieces

Seasonings & Oil:

  • 12 tbsp olive oil or avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp ground black pepper

Instructions

1. Preheat the Air Fryer

  • Set your air fryer to 400°F (200°C) and preheat for 3–5 minutes.

2. Prepare the Ingredients

  • In a large bowl, combine the chicken pieces and chopped vegetables.
  • Drizzle with olive oil, tossing to coat evenly.

3. Season the Chicken & Vegetables

  • In a small bowl, mix garlic powder, onion powder, chili powder, Italian seasoning, salt, and black pepper.
  • Sprinkle the seasoning blend over the chicken and vegetables, tossing well.

4. Cook in the Air Fryer

  • Place the seasoned chicken and vegetables into the air fryer basket in a single layer.
  • Air fry at 400°F (200°C) for 10 minutes, shaking the basket halfway through.

5. Serve & Enjoy

  • Remove from the air fryer and serve immediately!
