Ingredients
Protein & Vegetables:
- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 1 medium zucchini, chopped into half-moons
- 1 bell pepper (red, orange, or yellow), chopped into 1-inch pieces
- 1 cup baby Bella mushrooms, halved
- 1 small purple onion, chopped into 1-inch pieces
Seasonings & Oil:
- 1–2 tbsp olive oil or avocado oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp ground black pepper
Instructions
1. Preheat the Air Fryer
- Set your air fryer to 400°F (200°C) and preheat for 3–5 minutes.
2. Prepare the Ingredients
- In a large bowl, combine the chicken pieces and chopped vegetables.
- Drizzle with olive oil, tossing to coat evenly.
3. Season the Chicken & Vegetables
- In a small bowl, mix garlic powder, onion powder, chili powder, Italian seasoning, salt, and black pepper.
- Sprinkle the seasoning blend over the chicken and vegetables, tossing well.
4. Cook in the Air Fryer
- Place the seasoned chicken and vegetables into the air fryer basket in a single layer.
- Air fry at 400°F (200°C) for 10 minutes, shaking the basket halfway through.
