Ingredients

2 cups cooked chicken, shredded

1 cup white cheddar cheese, shredded

1 apple, diced

1 (15 oz) can white beans, drained and rinsed

1 cup chicken broth

1 onion, chopped

1 teaspoon chili powder

1 teaspoon ground cumin

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened and fragrant.
  3. Stir in the diced apple and cook for 2–3 minutes until slightly tender.
  4. Add the shredded chicken, white beans, chili powder, cumin, garlic powder, salt, and black pepper. Stir to combine.
  5. Pour in the chicken broth and bring the chili to a gentle simmer.
  6. Cook uncovered for about 20 minutes, stirring occasionally.
  7. Reduce heat to low and stir in the shredded white cheddar cheese until fully melted and creamy.
