Description

Alice Springs Chicken is a savory, indulgent dish featuring juicy chicken breasts topped with a tangy homemade honey mustard sauce, sautéed mushrooms, a crispy, savory topping, and melted cheese. Ingredients

4 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tbsp olive oil or butter (for searing or grilling)

1/4 cup Dijon mustard

3 tbsp honey

2 tbsp mayonnaise

1 tsp lemon juice (optional)

1 cup sliced mushrooms

1 cup shredded Colby Jack or cheddar cheese

Fresh parsley, chopped (optional garnish)


Instructions

  1. In a small bowl, whisk together Dijon mustard, honey, mayonnaise, and lemon juice until smooth. Set aside.
  2. Pat the chicken breasts dry and season both sides with salt and black pepper.
  3. Cook the chicken using your preferred method: Grill over medium-high heat for 6–8 minutes per side, or skillet-sear in oil or butter until golden and fully cooked. Remove and set aside.
  4. In the same skillet, sauté sliced mushrooms until browned and tender.
  5. Preheat the oven to 400°F or set the broiler on high.
  6. Place cooked chicken on a baking sheet. Brush generously with honey mustard sauce.
  7. Top each piece with sautéed mushrooms, your savory topping of choice, and shredded cheese.
  8. Melt the cheese by broiling 2–3 minutes or baking 5–7 minutes until bubbly.
  9. Garnish with chopped parsley and serve hot.

Notes

Chicken thighs can be used instead of breasts for a juicier option.
