This Amazing Forgotten Chicken Recipe is the ultimate no-fuss comfort food. Tender chicken breasts bake over creamy, flavorful rice in a single casserole dish for a hearty meal the whole family will love. With just a few pantry staples, this oven-baked classic is perfect for busy weeknights or cozy weekends.
Ingredients
4 boneless, skinless chicken breasts
2 cups Minute rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 can water (use soup can for measurement)
1 packet Lipton onion soup mix
1 tbsp butter (for greasing dish)
Instructions
- 
Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish with butter. 
- 
In a bowl, mix Minute rice, cream of mushroom soup, cream of chicken soup, and water until well combined. 
- 
Pour rice mixture into the prepared casserole dish and spread evenly. 
- 
Lay chicken breasts on top of the rice mixture. 
- 
Sprinkle onion soup mix evenly over the chicken. 
- 
Cover the dish with foil and bake for 45–50 minutes, or until chicken is cooked through and rice is tender. 
- 
Let rest for a few minutes before serving. Serve warm and enjoy! 
Notes
Substitute regular white rice, adding ½ can more water if needed.
Add vegetables like mushrooms, peas, or carrots to the rice mixture.
Top with shredded cheddar during the last 10 minutes of baking for a cheesy finish.
Can be assembled ahead and stored in the fridge for up to 24 hours before baking.
Store leftovers in an airtight container for up to 3 days, or freeze for 3 months.
