Description

This Amazing Forgotten Chicken Recipe is the ultimate no-fuss comfort food. Tender chicken breasts bake over creamy, flavorful rice in a single casserole dish for a hearty meal the whole family will love. With just a few pantry staples, this oven-baked classic is perfect for busy weeknights or cozy weekends.


Ingredients

4 boneless, skinless chicken breasts

2 cups Minute rice

1 can cream of mushroom soup

1 can cream of chicken soup

1 can water (use soup can for measurement)

1 packet Lipton onion soup mix

1 tbsp butter (for greasing dish)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish with butter.

  2. In a bowl, mix Minute rice, cream of mushroom soup, cream of chicken soup, and water until well combined.

  3. Pour rice mixture into the prepared casserole dish and spread evenly.

  4. Lay chicken breasts on top of the rice mixture.

  5. Sprinkle onion soup mix evenly over the chicken.

  6. Cover the dish with foil and bake for 45–50 minutes, or until chicken is cooked through and rice is tender.

  7. Let rest for a few minutes before serving. Serve warm and enjoy!

Notes

Substitute regular white rice, adding ½ can more water if needed.

Add vegetables like mushrooms, peas, or carrots to the rice mixture.

Top with shredded cheddar during the last 10 minutes of baking for a cheesy finish.

Can be assembled ahead and stored in the fridge for up to 24 hours before baking.

Store leftovers in an airtight container for up to 3 days, or freeze for 3 months.
