Ingredients

For the Skillet:

2 tablespoons avocado oil

12 oz chicken apple sausage, chopped

½ yellow onion, diced

2 cups sweet potato, diced

1 ½ cups Brussels sprouts, halved

¾ teaspoon salt

¼ teaspoon black pepper

2 teaspoons garlic powder

½ cup Honeycrisp apple, peeled and diced

1 cup kale, chopped

¼ cup chicken broth

1 teaspoon apple cider vinegar

2 teaspoons thyme leaves

1 tablespoon parsley, chopped


Instructions

  • Cook the Sausage:
    Heat avocado oil in a large skillet over medium heat. Add the sausage and cook for 2-3 minutes on each side until browned. Set aside.

  • Cook the Vegetables:
    In the same skillet, add onion, sweet potato, and Brussels sprouts. Season with salt, pepper, and garlic powder, sautéing for 8-10 minutes or until vegetables are tender and slightly crispy.

  • Add the Apple and Kale:
    Stir in the diced apple, kale, chicken broth, apple cider vinegar, and thyme. Let it simmer for 3-4 minutes until the apple softens and the kale wilts.

  • Finish the Dish:
    Return the sausage to the skillet and stir everything together to heat through. Garnish with parsley and serve warm.
