Warm and cozy apple cinnamon breakfast quesadillas filled with tender spiced apples and wrapped in a crispy golden tortilla, perfect for a quick and comforting start to the day.
Ingredients
2 medium apples, peeled and diced
1 tablespoon butter
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 flour tortillas
2 tablespoons cream cheese or vanilla yogurt (optional)
1 teaspoon powdered sugar, for garnish (optional)
Instructions
- Peel and dice the apples into small cubes.
- Melt the butter in a skillet over medium heat. Add the apples, brown sugar, and cinnamon.
- Cook for 6–8 minutes, stirring occasionally, until the apples are soft and coated.
- Stir in the vanilla extract and remove from heat.
- Lay a tortilla flat and spoon the apple mixture onto one half. Spread cream cheese or yogurt over the apples if using.
- Fold the tortilla in half and press gently.
- Heat a clean skillet with a little butter and cook the quesadilla for 2–3 minutes per side until golden and crispy.
- Remove, slice, garnish with powdered sugar if desired, and serve warm.
Notes
Granny Smith apples add a nice tart contrast.
Honeycrisp apples work well for a sweeter filling.
Add chopped nuts for extra crunch.
Best enjoyed fresh while the tortilla is crisp.
