Description

Avocado Chicken Salad is a healthy, refreshing twist on the classic chicken salad. Made with tender rotisserie chicken, creamy mashed avocados, and a burst of pomegranate seeds, this salad is packed with vibrant flavors and textures. It’s quick and easy to prepare, making it a perfect meal for sandwiches, wraps, or enjoyed on its own. A satisfying, nutritious dish that’s great for any occasion!

Ingredients

  • 2 cups cubed rotisserie chicken
  • 2 ripe avocados, mashed
  • 1/2 cup pomegranate seeds (or dried cranberries)
  • 1/4 cup chopped green onions (or red onions)
  • 1/2 cup cherry tomatoes, halved
  • 1 small jalapeno pepper, minced (optional)
  • 1/4 cup fresh cilantro leaves (or parsley/dill)
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 garlic clove, minced (or garlic powder)
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste

Instructions

  • Prepare the Ingredients:
In a large bowl, combine the cubed rotisserie chicken, mashed avocados, pomegranate seeds, chopped green onions, halved cherry tomatoes, minced jalapeno pepper, and chopped cilantro leaves.

  • Make the Dressing:
In a small bowl, whisk together the mayonnaise, lime juice, minced garlic, ground cumin, salt, and pepper until well combined.

  • Combine and Serve:
Pour the dressing over the chicken mixture and toss gently to coat all ingredients evenly. Serve immediately or refrigerate until ready to use.

Notes

  • Swap Out the Herbs: You can swap cilantro for fresh basil or dill for a different herb flavor.
  • Boost Fiber: Add finely chopped radishes or apples for extra crunch and fiber.
  • Lighten Up the Dressing: Use Greek yogurt instead of mayonnaise for a lighter version.
  • Store the Salad: Store in an airtight container for up to 2-3 days. To prevent the avocado from browning, press plastic wrap directly onto the surface before sealing.
