Description

These Bean and Cheese Burritos are quick, simple, and filled with creamy refried beans, smoky paprika, and two types of melty cheese. Perfect for any meal, these burritos are customizable, making them a family-friendly favorite. Whether for lunch, dinner, or a satisfying snack, they’re sure to please everyone at the table.


Ingredients

1 (16-oz) can BUSH’S® Traditional Refried Beans

½ cup chunky salsa

¼ medium onion, diced

½ teaspoon smoked paprika

½ teaspoon garlic powder

¼ teaspoon kosher salt, plus more to taste

¼ teaspoon freshly ground black pepper

½ cup shredded cheddar cheese

½ cup shredded Monterey Jack cheese

4 (10-inch) flour tortillas (burrito-sized)


Instructions

  • Preheat your oven to 375°F (190°C). Line a small baking sheet with parchment paper and set aside.

  • In a medium bowl, combine refried beans, salsa, onions, smoked paprika, garlic powder, salt, and black pepper. Stir until well combined. Taste and adjust seasoning with more salt if desired.

  • In another medium bowl, mix the shredded cheddar and Monterey Jack cheese together.

  • Spread ¼ cup of the shredded cheese mixture onto the center of each tortilla. Then, add ½ cup of the bean mixture on top of the cheese.

  • Fold the bottom edge of each tortilla up over the filling. Then fold in the sides and roll the tortilla tightly from the bottom.

  • Place the burritos seam-side down on the prepared baking sheet and bake for 12 minutes until the burritos are golden and crispy.

  • Serve with guacamole, sour cream, and your favorite hot sauce.

Notes

Storage: Store leftover burritos in an airtight container in the refrigerator for up to 3 days.

Reheating: To reheat, place the burritos in the oven at 350°F (175°C) for 10-12 minutes, or until heated through. You can also warm them in a skillet over medium heat for 5-7 minutes on each side.

Make Ahead: You can prepare and roll the burritos ahead of time and refrigerate them. When ready to eat, just heat in the oven or stovetop.
