Ingredients
1 lb beef (sirloin or flank steak), thinly sliced
2 tablespoons light soy sauce
1 tablespoon dark soy sauce
1 tablespoon sugar
1/4 cup chicken broth
1 tablespoon sesame oil
2 teaspoons vegetable oil
12 oz fresh or dried wide rice noodles
1/2 onion, thinly sliced
2 cloves garlic, minced
1-inch piece fresh ginger, thinly sliced
2 green onions, sliced (white and green parts separated)
1 cup Chinese broccoli (gai lan), chopped
1 cup bean sprouts

Prepare the noodles: Cook dried rice noodles according to package instructions or gently separate fresh noodles by hand.

Marinate the beef: Toss sliced beef with 1 tablespoon light soy sauce and 1 teaspoon sesame oil. Let sit for 10 minutes.

Make the sauce: Mix remaining soy sauces, sugar, and chicken broth in a small bowl. Set aside.

Cook the beef: Heat 1 teaspoon vegetable oil in a skillet or wok over medium-high heat. Stir-fry beef for 2–3 minutes until browned. Remove and set aside.

Cook aromatics: In the same pan, heat the remaining oil. Add garlic, ginger, onion, and the white part of the green onions. Sauté for 1–2 minutes.

Add noodles and sauce: Add noodles to the pan, pour in the sauce, and stir well to coat.

Combine and finish: Add Chinese broccoli, bean sprouts, and cooked beef. Stir-fry for another 2–3 minutes until vegetables are tender-crisp. Add the green parts of the green onions and toss to combine.
