Description

Beef Fried Rice is a quick, savory one-pan meal made with tender beef, scrambled eggs, vegetables, and cold cooked rice. It’s an easy and customizable dinner that’s perfect for using up leftover rice, packed with flavors from soy sauce, beef broth, and a touch of hot sauce.


Ingredients

For the Beef:

1 lb beef (strip, skirt, flank, or sirloin), thinly sliced

2 tbsp soy sauce

For the Fried Rice:

3 cups cold cooked rice

2 eggs, scrambled

1 cup frozen peas and carrots

1 onion, diced

2 cloves garlic, minced

3 tbsp beef broth

2 tbsp chicken broth

2 tbsp hot sauce (optional)

3 green onions, sliced


Instructions

  1. Tenderize Beef:

    • Tenderize beef slices with a meat mallet. Toss with 2 tbsp soy sauce and set aside.

  2. Cook Beef:

    • In a large skillet or wok, cook the beef for 3-4 minutes, then set aside. Deglaze the pan with chicken broth and reduce.

  3. Cook Vegetables:

    • Sauté onions, garlic, and frozen peas and carrots until softened, about 3-4 minutes. Add cold rice and toss with the sauce.

  4. Add Beef and Eggs:

    • Stir in the cooked beef, scrambled eggs, and green onions. Toss everything together to combine and heat through.

Notes

Rice Options: Try brown rice or cauliflower rice for a healthier, low-carb twist.

Other Proteins: Swap the beef for chicken or shrimp to suit your preferences.

Hot Sauce: Add hot sauce for a bit of heat, or increase red pepper flakes for more spice.
