Description

Ingredients

Beet Cashew Hummus:

1¼ cups raw cashews, soaked at least 2 hours

1 medium beet, washed

¼ cup fresh lemon juice (from 23 lemons)

3 tbsp tahini

3 tbsp extra virgin olive oil

1 tbsp water

2 cloves garlic, chopped

½ tsp kosher salt

Pinch of cayenne

Garlic Tahini Yogurt Swirl:

¼ cup yogurt (or plant-based yogurt)

1 tbsp tahini

1 large garlic clove, pressed

⅛ tsp kosher salt

Almond Za’atar Topping:

⅓ cup dry roasted almonds, chopped

1 tsp toasted sesame seeds

1 tsp sumac

1 tsp dried thyme

¼ tsp kosher salt

¼ tsp extra virgin olive oil


Instructions

  • Roast the beet: Preheat oven to 450°F. Wrap beet in foil and roast 40–50 minutes until tender. Let cool, then peel and slice.

  • Make the swirl: Mix yogurt, tahini, garlic, and salt. Chill until ready to use.

  • Prepare topping: In a small bowl, combine almonds, sesame seeds, sumac, thyme, salt, and olive oil. Set aside.

  • Blend hummus: Drain soaked cashews. In a blender or food processor, combine cashews, beet, lemon juice, tahini, olive oil, water, garlic, salt, and cayenne. Blend until smooth, adjusting with water or oil as needed.

  • Assemble: Spoon hummus into a serving bowl, swirl in tahini yogurt, and sprinkle with almond za’atar. Garnish with fresh thyme if desired.

  • Serve: Pair with cucumber spears, crackers, pita chips, or flatbread.

Use dairy-free yogurt for a vegan version.
