Berrylicious Strawberry Crunch Cheesecake is a no-bake dessert featuring creamy cheesecake layers topped with a crunchy strawberry crumble. The combination of smooth cheesecake, sweet strawberry flavor, and a delicious crunch makes this dessert irresistible.
Ingredients
2 cups (200g) crushed Golden Oreos or graham crackers
½ cup (115g) unsalted butter, melted
16 oz (450g) cream cheese, softened
1 cup (240ml) heavy whipping cream, cold
1 cup (100g) powdered sugar
1 tsp vanilla extract
½ cup (120ml) strawberry jam or puree
1 cup (100g) crushed Golden Oreos
½ cup (60g) freeze-dried strawberries, crushed
¼ cup (55g) unsalted butter, melted
Fresh strawberries, sliced (optional)
Whipped cream (optional)
Instructions
- In a medium mixing bowl, combine the crushed Golden Oreos or graham crackers and melted butter. Mix until evenly combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Place the crust in the freezer for 20 minutes to set.
- In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. In a separate bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream and vanilla extract into the cream cheese mixture until smooth and fully combined. Divide the filling in half. Mix the strawberry jam or puree into one half of the filling to create a strawberry-flavored layer.
- Spread the plain cheesecake layer evenly over the chilled crust. Add the strawberry cheesecake layer on top of the plain layer. Smooth the top with a spatula and refrigerate for at least 4 hours, or until firm.
- In a bowl, combine the crushed Golden Oreos, freeze-dried strawberries, and melted butter. Stir until well mixed.
- Sprinkle the strawberry crunch topping evenly over the cheesecake layer.
- Carefully remove the cheesecake from the springform pan. Garnish with fresh strawberries and whipped cream if desired. Slice and serve chilled.
Notes
For an extra berrylicious touch, add a layer of fresh strawberry slices between the cheesecake layers.
If you prefer other berries, substitute strawberry jam with raspberry or blueberry jam for a new twist.
Mix in different types of crunchy cookies like chocolate wafer cookies for a variety in the topping.
