Ingredients
2 (14-ounce) cans black beans, drained, rinsed, and patted dry
1 tbsp extra virgin olive oil
3/4 cup finely chopped bell pepper
1 cup finely chopped yellow onion
3 garlic cloves, minced
1 1/2 tsp ground cumin
1 tsp chili powder
1/2 tsp garlic powder
1/4 tsp smoked paprika
1/2 cup bread crumbs or oat flour
1/2 cup feta cheese (optional)
2 large eggs
2 tbsp ketchup, mayo, or BBQ sauce
Pinch of salt and pepper
Instructions
-
Preheat and Prepare Beans: Preheat the oven to 325°F (163°C). Spread the black beans on a lined baking sheet and bake for 15 minutes to reduce moisture.
-
Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add chopped bell pepper, onion, and garlic. Sauté for 5–7 minutes until softened. Blot any excess moisture.
-
Mix the Burger Ingredients: In a large bowl or food processor, combine the sautéed vegetables, cumin, chili powder, garlic powder, smoked paprika, breadcrumbs or oat flour, feta cheese (if using), eggs, ketchup, salt, and pepper. Mix until well combined.
-
Form Patties: Shape the mixture into 6 patties (about 1/2 cup of the mixture per patty).
-
Cook the Patties:
-
Baking Option: Place patties on a parchment-lined baking sheet. Bake at 375°F (191°C) for 10 minutes per side.
-
Grilling Option: Place patties on greased aluminum foil and grill over medium-high heat for 8 minutes per side.
-
Notes
Extra Flavor: Add cayenne pepper or hot sauce for a spicier burger.
Vegan Version: Skip the feta cheese and eggs; use a flax egg (1 tbsp ground flaxseed + 3 tbsp water) as a binder.
Cheese Stuffed: Try stuffing the burgers with cheese, like cheddar or mozzarella, for a gooey surprise.
Toppings: Serve with lettuce, tomato, pickles, or avocado for added flavor.
