For the Garlic Butter Custard:

  • Roasted garlic (from above)
  • ½ cup melted butter (113g)
  • 1 egg
  • ¼ cup milk (60g)
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • 2 tablespoons chopped fresh parsley

For Assembly:

  • 1 loaf of bread (French baguette or Hawaiian sweet rolls)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Roast the Garlic:

    • Preheat oven to 400°F (200°C).
    • Place peeled garlic cloves on a baking sheet, drizzle with olive oil, and sprinkle with salt.
    • Cover with foil and roast for 20 minutes, until golden and soft.
  2. Prepare the Bread:

    • Slice the loaf in half lengthwise.
    • Place halves on a baking sheet and bake for 5-7 minutes until lightly crispy.
  3. Make the Garlic Butter Custard:

    • Mash the roasted garlic into a paste.
    • In a bowl, whisk together the mashed garlic, melted butter, egg, milk, salt, paprika, and chopped parsley.
  4. Dip the Bread:

    • Reduce oven temperature to 350°F (175°C).
    • Dip each bread half into the garlic butter custard for even coverage.
    • Place the dipped bread back on the baking sheet.
  5. Second Bake:

    • Bake the dipped bread for 10-12 minutes until the custard sets and turns golden.
  6. Add Cheese & Final Bake:

    • Sprinkle shredded mozzarella and Parmesan evenly over the bread halves.
    • Switch oven to broil and broil for 2-3 minutes until the cheese is bubbly and slightly browned.
  7. Serve:

    • Let the cheesy garlic bread cool slightly, then slice and serve warm.

Notes

  • Make Ahead: The garlic butter custard can be prepared 24 hours in advance and stored in the fridge.
  • Customize the Cheese: Use cheddar, gouda, or your favorite cheese blend for added flavor.
