These Birthday Cake Granola Clusters are a fun, crunchy treat that packs a delightful cake-batter flavor with the joy of rainbow sprinkles and a drizzle of white chocolate. Ingredients

2 1/2 cups old-fashioned rolled oats

3/4 cup sliced almonds (or slivered)

1/2 tsp kosher salt

4 Tbsp (1/2 stick) butter, melted

1/4 cup pure maple syrup

1/4 cup honey

1 large egg white (optional, for clusters)

1 Tbsp vanilla extract

1 Tbsp cake batter flavoring

5 Tbsp rainbow jimmies sprinkles

4 oz white chocolate baking bar, melted


Instructions

  1. Preheat your oven to 325°F and line a baking sheet with parchment paper.
  2. In a large bowl, toss together the oats, almonds, and salt.
  3. Stir in the melted butter, maple syrup, honey, beaten egg white (if using), vanilla extract, and cake batter flavoring until well combined.
  4. Gently fold in the rainbow sprinkles.
  5. Press the mixture evenly and tightly into the prepared baking sheet.
  6. Bake for 15 minutes, rotate the pan, then bake for another 15–20 minutes until golden and fragrant—keep an eye on it to prevent burning.
  7. Allow the mixture to cool completely on the baking sheet for about 30 minutes so the clusters set.
  8. Melt the white chocolate and drizzle it over the cooled clusters. Let the chocolate harden for about 15 minutes.
  9. Once the clusters are completely set, break them into pieces and store in airtight containers.

Notes

For a vegan version, omit the egg white and use plant-based butter.

Swap the sliced almonds for cashews or walnuts if preferred.

Use different colored sprinkles or mini chocolate chips for variation.

Swap white chocolate for dark or milk chocolate for a richer taste.
