Description

Blackberry Cream Cheese Brownies combine a rich, fudgy brownie base with a smooth cream cheese layer and a burst of fresh blackberries. This dessert offers a perfect balance of chocolate, tangy cream cheese, and fruity sweetness.


Ingredients

½ cup melted butter

1 cup sugar

2 eggs

1 tsp vanilla extract

⅓ cup cocoa powder

½ cup flour

¼ tsp salt

8 oz cream cheese, softened

¼ cup sugar (for cream cheese layer)

1 egg (for cream cheese layer)

½ tsp vanilla extract (for cream cheese layer)

1 cup fresh blackberries

2 tbsp sugar (for blackberry topping)


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. For the brownie base: In a bowl, combine melted butter and sugar. Stir in eggs and vanilla. In another bowl, whisk cocoa powder, flour, and salt. Add dry ingredients to the wet ingredients and mix until combined. Pour into prepared pan.
  3. For the cream cheese layer: Beat cream cheese until smooth. Add sugar, egg, and vanilla and mix until fully incorporated. Pour over brownie base.
  4. For the topping: Toss blackberries with sugar. Spoon over the cream cheese layer.
  5. Bake for 30–35 minutes, or until set and a toothpick inserted comes out with a few crumbs.
  6. Cool before cutting into squares and serving.

Notes

Store leftovers in an airtight container for up to 3 days. Refrigerate for up to 5 days.

Freezes well for up to 3 months. Thaw at room temperature or microwave slightly to warm.

For a nuttier version, add chopped nuts to the brownie layer.
