Description

Blackberry Pistachio Dream Bars are a decadent dessert featuring layers of biscuit base, pistachio mixture, cream cheese, blackberry topping, and a garnish of pistachios and fresh blackberries.


Ingredients

  • 1 cup crushed digestive biscuits
  • ¼ cup unsalted butter, melted
  • 1 cup shelled pistachios, finely ground
  • ¼ cup confectioners’ sugar
  • ¼ cup heavy cream
  • 1 cup cream cheese, softened
  • ½ cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh blackberries
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • ¼ cup shelled pistachios, chopped
  • Fresh blackberries for garnish

Instructions

  1. Mix crushed digestive biscuits with melted butter and press firmly into the bottom of a lined 8×8 inch baking pan. Chill for 20 minutes.
  2. Blend ground pistachios with confectioners’ sugar and heavy cream until smooth. Spread this pistachio mixture evenly over the chilled biscuit base. Chill for another 20 minutes.
  3. Beat cream cheese with confectioners’ sugar and vanilla extract until smooth and creamy. Spread evenly over the pistachio layer. Chill again.
  4. In a saucepan over medium heat, combine blackberries, granulated sugar, lemon juice, and cornstarch. Cook until thickened, stirring frequently. Let cool slightly before spreading over the cream cheese layer. Chill until fully set.
  5. Just before serving, sprinkle chopped pistachios on top and garnish with fresh blackberries.
