Description

These BLT Egg Salad Lettuce Wraps are a fresh, healthy twist on the classic BLT. Packed with creamy egg salad, crispy turkey bacon, juicy cherry tomatoes, and fresh romaine lettuce, these wraps offer a low-carb, flavorful option perfect for a snack, lunch, or light dinner. Quick, easy, and satisfying, they’re sure to become a new favorite!

Ingredients

6 hard-boiled eggs, peeled and chopped

¼ cup mayonnaise or Greek yogurt

1 tsp Dijon mustard

½ tsp garlic powder

Salt and pepper, to taste

4 strips turkey bacon, cooked until crispy and crumbled

½ cup cherry tomatoes, halved

6 large romaine lettuce leaves, washed and dried

Instructions

  • Prepare the egg salad: In a mixing bowl, combine chopped hard-boiled eggs, mayonnaise (or Greek yogurt), Dijon mustard, garlic powder, salt, and pepper. Stir until creamy but still slightly chunky.

  • Assemble the wraps: Lay the romaine lettuce leaves flat on a serving plate. Spoon a generous portion of egg salad into the center of each lettuce leaf.

  • Add toppings: Top each wrap with crumbled turkey bacon and halved cherry tomatoes.

  • Serve: Serve immediately or chill for a short time if preferred.

Notes

Add Avocado: For extra creaminess and healthy fats, add a few slices of avocado on top of the egg salad.

Extra Veggies: Add cucumbers, red onions, or bell peppers for more crunch and flavor.

Spicy Kick: Stir in hot sauce or diced jalapeños for a spicy version.

Dairy-Free: Use dairy-free mayo or yogurt for a dairy-free option.

Storage: Store leftover egg salad in an airtight container in the fridge for up to 2 days. Keep lettuce separate to prevent sogginess.
