Description
Blueberry Yogurt Bark is a healthy, refreshing, and no-bake treat made with creamy yogurt, fresh blueberries, and honey. It’s customizable with toppings like granola or nuts, perfect for a quick snack or dessert.
Ingredients
2 cups plain or Greek yogurt
1 cup fresh or frozen blueberries
2 tbsp honey (or maple syrup for a vegan option)
¼ cup granola (optional, for topping)
1 teaspoon vanilla extract (optional)
Instructions
- Prepare the baking sheet: Line a baking sheet with parchment paper and set it aside.
- Mix the yogurt: In a medium bowl, combine the yogurt, honey, and vanilla extract (if using). Stir until smooth and well combined.
- Add blueberries: Gently fold in the blueberries, being careful not to crush them completely. You want a marbled effect, so keep the blueberries intact while mixing.
- Spread the mixture: Pour the yogurt mixture onto the prepared baking sheet. Use a spatula to spread it evenly into a thin layer, about ¼-inch thick.
- Add toppings: Sprinkle granola or any other toppings you like (such as nuts, seeds, or coconut flakes) evenly over the yogurt.
- Freeze: Place the baking sheet in the freezer for 3-4 hours, or until the bark is completely firm.
- Break and serve: Once frozen, remove the bark from the baking sheet and break it into pieces. Serve immediately or store for later.
Notes
Non-dairy yogurt (like coconut, almond, or oat milk yogurt) can be used for a dairy-free and vegan version.
Substitute blueberries with other fruits like strawberries, raspberries, or blackberries. Chop larger fruits into smaller pieces.
Add more toppings like chopped nuts, shredded coconut, or chia seeds for extra crunch and nutrition.
This treat can be made ahead and stored in the freezer for up to 2 weeks.
If you prefer a sweeter yogurt bark, use sweetened yogurt or adjust the amount of honey or maple syrup.
Frozen blueberries work just fine and provide a beautiful marbled effect, though they may release more juice.
Mini chocolate chips or dark chocolate chunks are a great addition for an indulgent touch.
Flavored yogurt, like vanilla or coconut, can add extra flavor to the bark.
