Description

A comforting, high-protein broccoli breakfast bake made with fluffy eggs, tender broccoli, and salty feta cheese—perfect for easy make-ahead mornings or relaxed brunches.


Ingredients

8 large eggs

1 1/2 cups chopped steamed broccoli

1/2 cup crumbled feta cheese

1/3 cup chopped sun-dried tomatoes (oil-packed, drained)

1/4 cup milk (any kind)

1/2 teaspoon garlic powder

Salt, to taste

Black pepper, to taste

Olive oil or cooking spray (for greasing)

Optional: chopped fresh herbs (parsley, dill, or basil)


Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8×8 or 9×9-inch baking dish with olive oil or cooking spray.
  2. In a large bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until pale and slightly frothy.
  3. Gently fold in the broccoli, sun-dried tomatoes, and feta until evenly distributed.
  4. Pour the mixture into the prepared baking dish and smooth the top.
  5. Bake for 30–35 minutes, until the edges are lightly golden and the center is fully set.
  6. Remove from the oven and let rest for 5–10 minutes before slicing and serving.

Notes

Frozen broccoli works well if thawed and excess moisture is removed.

Letting the bake rest helps it slice cleanly.

Swap feta with goat cheese or cheddar for a different flavor.

Great for meal prep and reheats well.

Can be doubled and baked in a 9×13-inch pan.
