Description

Ingredients

2 (10-ounce) packages frozen chopped broccoli

2 tablespoons butter, divided

1 cup celery, chopped

1 cup onion, chopped

2 cloves garlic, minced

1 (10.5-ounce) can condensed cream of mushroom soup

1 (10.5-ounce) can condensed cream of chicken soup

2/3 cup milk

8 ounces Muenster or Swiss cheese, shredded

2 teaspoons Dijon mustard

1/2 teaspoon paprika

1/2 teaspoon freshly ground black pepper

3 cups cooked long grain white rice

1/2 cup panko bread crumbs


Instructions

  1. Prepare the Broccoli: Place frozen broccoli and 2 tablespoons water in a microwave-safe bowl. Cover and microwave for 5 minutes. Drain and set aside.

  2. Cook the Vegetables: Melt 1 tablespoon butter in a skillet over medium heat. Add celery, onion, and garlic. Cook for 3-5 minutes until tender.

  3. Make the Sauce: Stir in the cream of mushroom soup, cream of chicken soup, and milk. Heat through.

  4. Combine the Mixture: Add the vegetable mixture to the broccoli. Stir in cheese, Dijon mustard, paprika, and black pepper.

  5. Add the Rice: Stir in the cooked rice until combined.

  6. Prepare the Casserole: Transfer to a greased 3-quart baking dish. Mix panko breadcrumbs with remaining butter, then sprinkle over the casserole.

  7. Bake: Bake at 350°F for 30-40 minutes or until golden and bubbly.

  8. Serve: Let cool for a few minutes, then serve warm.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
