A hearty, comforting busy day soup made with ground beef, onion soup mix, pasta, vegetables, and tomatoes, perfect for an easy and filling family meal with minimal prep.
Ingredients
1 lb ground beef
1 packet onion soup mix
1 3/4 cups mixed frozen vegetables
5 cups water
1 (28 oz) can diced tomatoes, with juice
1 cup uncooked macaroni
Instructions
- Brown the ground beef in a large soup pot over medium heat until fully cooked. Drain off any excess fat.
- Add the water, onion soup mix, and diced tomatoes with their juice to the pot. Stir well.
- Reduce the heat to medium-low and let the soup simmer for about 1 hour, stirring occasionally.
- Add the uncooked macaroni and frozen vegetables to the pot.
- Continue cooking over medium heat for about 15 minutes, stirring occasionally, until the pasta is tender and the vegetables are heated through.
- Serve hot.
Notes
This soup tastes even better the next day as the flavors continue to develop.
If the soup thickens too much when stored, add a little water when reheating.
For freezing, prepare the soup without the macaroni and add fresh pasta when reheating.
Lean ground beef works best for a lighter soup.
