Ingredients
1½ cup yellow or white cornmeal
½ cup all-purpose flour
3 tablespoons granulated sugar
1 tablespoon baking soda
1 teaspoon salt
½ teaspoon seafood Cajun seasoning
¼ teaspoon garlic powder
¼ teaspoon onion powder
¾ cup buttermilk, warmed
4 tablespoons unsalted butter, melted
¼ cup finely grated onion
1 large egg, beaten
Instructions
- Prepare the Dry Ingredients: Sift together cornmeal, flour, sugar, baking soda, and salt in a large mixing bowl.
- Add the Seasonings: Whisk in Cajun seasoning, garlic powder, and onion powder until evenly distributed.
- Mix the Wet Ingredients: Create a well in the center of the dry ingredients, add buttermilk, melted butter, grated onion, and beaten egg. Stir gently and fold in the dry ingredients until just combined.
- Chill the Batter: Cover and refrigerate the batter for 30 minutes to firm up.
- Heat the Oil: Heat 2-3 inches of oil to 350°F in a large deep skillet (adjust temperature to 325°F if frying too quickly).
- Form the Hush Puppies: Use a small cookie scoop or wet hands to form 1 tablespoon-sized balls of dough.
- Fry the Hush Puppies: Carefully drop dough balls into the hot oil and fry for 3-4 minutes per batch, turning until golden brown and cooked through.
- Drain the Hush Puppies: Remove the hush puppies from the oil and place on a wire rack lined with paper towels.
- Serve: Serve hot with tartar sauce, ranch, or spicy mayo for dipping.
