Description

Ingredients

1½ cup yellow or white cornmeal

½ cup all-purpose flour

3 tablespoons granulated sugar

1 tablespoon baking soda

1 teaspoon salt

½ teaspoon seafood Cajun seasoning

¼ teaspoon garlic powder

¼ teaspoon onion powder

¾ cup buttermilk, warmed

4 tablespoons unsalted butter, melted

¼ cup finely grated onion

1 large egg, beaten


Instructions

  1. Prepare the Dry Ingredients: Sift together cornmeal, flour, sugar, baking soda, and salt in a large mixing bowl.
  2. Add the Seasonings: Whisk in Cajun seasoning, garlic powder, and onion powder until evenly distributed.
  3. Mix the Wet Ingredients: Create a well in the center of the dry ingredients, add buttermilk, melted butter, grated onion, and beaten egg. Stir gently and fold in the dry ingredients until just combined.
  4. Chill the Batter: Cover and refrigerate the batter for 30 minutes to firm up.
  5. Heat the Oil: Heat 2-3 inches of oil to 350°F in a large deep skillet (adjust temperature to 325°F if frying too quickly).
  6. Form the Hush Puppies: Use a small cookie scoop or wet hands to form 1 tablespoon-sized balls of dough.
  7. Fry the Hush Puppies: Carefully drop dough balls into the hot oil and fry for 3-4 minutes per batch, turning until golden brown and cooked through.
  8. Drain the Hush Puppies: Remove the hush puppies from the oil and place on a wire rack lined with paper towels.
  9. Serve: Serve hot with tartar sauce, ranch, or spicy mayo for dipping.

Which Cornmeal to Use: Yellow cornmeal provides a rustic texture, while white cornmeal offers a softer bite. Choose based on your preference.
