Description

A hearty and delicious one-skillet meal featuring ground beef, vegetables, cabbage, and melted cheese, perfect for a quick and satisfying dinner.

Ingredients

  • 1 lb ground beef
  • 1 yellow onion, chopped
  • 1 bell pepper, chopped
  • 1 small head of cabbage, cored and chopped
  • 1 (14 oz) can diced tomatoes
  • 2 tsp Tony Chachere’s creole seasoning (or substitute with salt and preferred seasonings)
  • 2 tsp garlic powder
  • 2 tsp smoked paprika
  • 1 tsp black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. In a large skillet over medium heat, brown the ground beef. Drain excess fat if necessary, but a little remaining fat is fine.
  2. Add the chopped onion and bell pepper to the beef. Cook for 3-4 minutes until softened.
  3. Stir in the chopped cabbage, diced tomatoes (with juices), and all the seasonings. Mix well to combine.
  4. Cover the skillet with a lid and cook for 20-25 minutes, stirring occasionally, until the cabbage is tender. Taste and adjust seasoning if needed.
  5. Sprinkle the shredded cheddar cheese evenly over the skillet, cover again, and cook for a few minutes until the cheese melts.
  6. Serve hot, either on its own or over rice if desired.

Notes

  • Use lean ground beef if you prefer a lighter dish.
  • For a spicier kick, add a pinch of cayenne pepper or hot sauce.
  • This dish can be served on its own or over rice, quinoa, or cauliflower rice for a low-carb option.
