Description
Canarian Mojo Verde Sauce is a fresh, tangy sauce made with cilantro, parsley, green peppers, and olive oil. It’s a vibrant and versatile condiment perfect for grilled meats, roasted vegetables, or as a dip.
Ingredients
1 bunch fresh cilantro (stems removed)
½ bunch fresh parsley (stems removed)
5 large garlic cloves
2 small green peppers (either bell peppers or spicy ones)
1–2 teaspoons sea salt
¼ teaspoon ground cumin
1 cup good quality extra virgin olive oil
2 tablespoons sherry or red wine vinegar
Instructions
- Remove the stems from the cilantro and parsley and roughly chop the leaves.
- Roughly chop the garlic and mash it into a paste using a mortar and pestle.
- Add the cilantro, parsley, mashed garlic, chopped peppers, sea salt, and cumin to a blender or food processor. Pulse a few times to combine.
- Slowly drizzle in the olive oil while blending slowly. Be careful not to over-process the sauce; the traditional method uses a mortar and pestle, which leaves the sauce with some texture.
- Add the vinegar to taste, and then adjust the salt and cumin as needed.
Notes
Spicy Version: Add extra spicy peppers or a small fresh chili for added heat.
Add Nuts: For a thicker texture and richness, add a handful of toasted almonds or pine nuts.
Herb Swap: Try swapping some of the parsley with basil or mint for a different flavor profile.
