Description

Cheddar Bay Biscuit Seafood Pot Pie combines a rich, creamy seafood filling with shrimp, crab, and fish, all topped with golden, cheesy Cheddar Bay biscuits. This comforting dish is perfect for cozy dinners or special occasions. A coastal twist on the classic pot pie, ready in just under an hour!


Ingredients

1 lb shrimp, peeled and deveined

1 lb crab meat (or imitation crab)

1 cup fish fillets (cod or haddock), cut into chunks

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup heavy cream

2 cups chicken or seafood broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper, to taste

1 package of Cheddar Bay Biscuit mix (includes cheddar cheese & seasoning)

3/4 cup milk (for biscuit mix)

1/4 cup melted butter (for biscuit topping)


Instructions

  • Preheat oven to 400°F (200°C).

  • Cook shrimp, crab, and fish in a large pot over medium heat for 3-4 minutes until shrimp turns pink. Set seafood aside.

  • In the same pot, add broth, heavy cream, garlic powder, onion powder, thyme, salt, and pepper. Stir and bring to a gentle simmer.

  • Add frozen mixed vegetables and cooked seafood. Simmer for 5 minutes.

  • Stir for 5 minutes until sauce thickens. Remove from heat.

  • In a bowl, combine Cheddar Bay Biscuit mix with milk and stir gently until just combined.

  • Pour seafood mixture into a large baking dish and drop spoonfuls of biscuit dough over the top.

  • Drizzle melted butter over the biscuit topping.

  • Bake for 25-30 minutes or until biscuits are golden brown.

  • Let cool for 5-10 minutes before serving.
