Ingredients
**For the Pie:**
2 cups fresh corn kernels (or 1 ½ cups frozen, thawed)
1 cup sharp cheddar cheese, shredded
1 pre-made pie crust (9-inch)
3 large eggs
1 cup whole milk (or almond milk for dairy-free)
1 small onion, finely chopped
½ tsp salt
¼ tsp black pepper
**For the Crust (if making your own):**
Roll out dough on a floured surface to about 1/8-inch thick
Instructions
- Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners.
- In a skillet, sauté the chopped onion in a little oil over medium heat until translucent, about 5 minutes. Remove from heat.
- In a large mixing bowl, combine the corn, cheddar cheese, sautéed onion, eggs, milk, salt, and pepper. Stir until well mixed.
- Place the mixture into the pie crust and spread evenly.
- Bake for 30-35 minutes, or until the top is golden brown and the center is set. You can gently shake the pie to check for firmness.
- Let the pie cool for 10 minutes before slicing and serving.
Notes
For best results, use fresh corn when in season, but frozen corn works well year-round.
To add more flavor, include sautéed bell peppers, mushrooms, or spinach to the filling.
If you prefer, use a store-bought pie crust to save time.
