Description

Cheddar Sweet Corn Pie is a delicious savory-sweet pie with creamy sharp cheddar cheese, fresh corn, and caramelized onions, baked in a flaky golden crust. It’s perfect for family meals, potlucks, or a cozy dinner.

Ingredients

**For the Pie:**

2 cups fresh corn kernels (or 1 ½ cups frozen, thawed)

1 cup sharp cheddar cheese, shredded

1 pre-made pie crust (9-inch)

3 large eggs

1 cup whole milk (or almond milk for dairy-free)

1 small onion, finely chopped

½ tsp salt

¼ tsp black pepper

**For the Crust (if making your own):**

Roll out dough on a floured surface to about 1/8-inch thick

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. In a skillet, sauté the chopped onion in a little oil over medium heat until translucent, about 5 minutes. Remove from heat.
  3. In a large mixing bowl, combine the corn, cheddar cheese, sautéed onion, eggs, milk, salt, and pepper. Stir until well mixed.
  4. Place the mixture into the pie crust and spread evenly.
  5. Bake for 30-35 minutes, or until the top is golden brown and the center is set. You can gently shake the pie to check for firmness.
  6. Let the pie cool for 10 minutes before slicing and serving.

Notes

For best results, use fresh corn when in season, but frozen corn works well year-round.

To add more flavor, include sautéed bell peppers, mushrooms, or spinach to the filling.

If you prefer, use a store-bought pie crust to save time.
