A cheesy broccoli cornbread recipe that is flavorful, moist, and makes for a perfect side dish.
Ingredients
- 1 box Jiffy cornbread mix
- 1 cup broccoli florets, steamed and chopped
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1/4 teaspoon garlic powder (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×9-inch baking dish or cast-iron skillet.
- In a large mixing bowl, combine the Jiffy cornbread mix, milk, sour cream, melted butter, and eggs. Stir until well combined.
- Fold in the steamed and chopped broccoli, shredded cheddar cheese, and garlic powder (if using). Season with salt and pepper to taste.
- Pour the mixture into the prepared baking dish and spread evenly with a spatula.
- Bake for 25–30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let the cornbread cool for about 5 minutes before slicing. Serve warm as a side dish.

- Use fresh or frozen broccoli for convenience.
- Add more cheese for an extra cheesy flavor.
