They’re the perfect savory bite that’s both nutritious and indulgent, ideal for a snack, appetizer, or main dish.
Ingredients
For the Fritters:
1 1/2 pounds ground chicken
1 1/2 cups grated Cabot Seriously Sharp cheddar cheese
1/4 cup almond flour
1 large egg
2 cloves garlic, minced
2 tbsp fresh parsley, chopped
1/2 tsp salt
1/4 tsp pepper
1/4 tsp red pepper flakes (optional for heat)
1 tbsp oil (for frying)
1 tbsp butter (for frying)
Instructions
-
Prepare the Ingredients: In a large bowl, combine the ground chicken, grated cheddar, almond flour, egg, garlic, parsley, salt, pepper, and red pepper flakes. Mix until everything is well combined.
-
Form the Fritters: Using your hands, shape the mixture into small patties, about 2-3 inches in diameter.
-
Chill the Patties: Place the fritters on a baking sheet or plate and refrigerate for at least 1 hour to help them hold together better during frying.
-
Fry the Fritters: Heat the oil and butter in a large skillet over medium heat. Fry the fritters in batches for about 3 minutes per side, or until golden brown and crispy.
-
Serve: Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve with your favorite dipping sauce, such as ranch or a keto-friendly dressing.
Notes
Add Veggies: For extra flavor and nutrients, add finely chopped spinach, zucchini, or bell peppers to the fritter mixture.
Spicy Option: Add more red pepper flakes or some hot sauce to the fritter mixture if you like an extra kick.
Cheese Variations: You can use other cheeses such as mozzarella or parmesan for different flavor profiles.
