Description

These Cherry Chocolate Chewy Cookies combine sweet maraschino cherries and rich chocolate chips in a soft, chewy cookie that’s perfect for any occasion.

Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup maraschino cherries, drained and chopped

1 cup semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper to prevent sticking and ensure easy cleanup.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 3-5 minutes of mixing.
  3. Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually blend the dry ingredients into the wet ingredients, mixing until just combined.
  6. Gently fold in the chopped maraschino cherries and semisweet chocolate chips, ensuring they’re evenly distributed throughout the dough.
  7. Drop rounded spoonfuls of dough (about 1 tablespoon each) onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.
  8. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  9. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

Be sure to drain the cherries thoroughly before adding them to the dough to avoid excess moisture.

For a salty-sweet flavor combination, sprinkle a little sea salt on top of the cookies before baking.

Store leftover cookies in an airtight container at room temperature for up to a week. They also freeze well for longer storage.
