Description

Chichinga (Ghanaian Beef Kebabs) are bold, flavorful skewers marinated in a spicy peanut blend and grilled to perfection. Ingredients

1 lb beef sirloin or tenderloin, cut into 1-inch cubes

2 tbsp ground peanuts or peanut butter powder

1 tbsp paprika

1 tsp ground ginger

1 tsp ground cumin

1 tsp cayenne pepper (adjust to taste)

1 tsp garlic powder

1 tsp onion powder

1 tbsp vegetable oil

Salt and black pepper, to taste

Wooden or metal skewers


Instructions

  • Prep the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

  • Make the Marinade: In a mixing bowl, combine ground peanuts, paprika, ginger, cumin, cayenne pepper, garlic powder, onion powder, oil, salt, and pepper to form a thick paste.

  • Marinate the Beef: Add the beef cubes and coat them thoroughly in the paste. Cover and refrigerate for at least 1 hour.

  • Preheat the Grill: Heat your grill to medium-high.

  • Skewer the Beef: Thread marinated beef onto skewers, leaving slight gaps between each piece.

  • Grill the Kebabs: Grill for 10–12 minutes, turning occasionally, until charred and cooked to desired doneness.

  • Serve: Rest the skewers for a few minutes and serve hot with sides like jollof rice or plantains.

Notes

Make Ahead: You can marinate and skewer the beef up to a day in advance.

Less Heat: Reduce cayenne if you prefer milder spice.
