This Chicken Bryan, a copycat Carrabba’s recipe, features grilled chicken topped with savory goat cheese, sun-dried tomatoes, fresh basil, and a rich lemon butter sauce, making it a flavorful and vibrant dish perfect for spring or summer.
Ingredients
4 boneless skinless chicken breasts (about 1 1/2 pounds)
1/4 cup extra virgin olive oil
1 teaspoon Italian seasoning
1 lemon juiced
3 garlic cloves minced
1/4 teaspoon salt
1/8 teaspoon black pepper
3/4 cup sun-dried tomatoes in oil sliced
4 oz. goat cheese (crumbled or a log will work)
For the lemon butter sauce:
1 stick of unsalted butter
3 garlic cloves minced
1 teaspoon Italian seasoning
2 tablespoons oil from the sun-dried tomato jar
1/4 cup fresh basil sliced
3 tablespoons lemon juice
1/4 cup heavy cream
Instructions
- In a large ziplock bag, combine olive oil, Italian seasoning, lemon juice, garlic, salt, and pepper. Add chicken breasts, seal the bag, and massage the marinade into the chicken. Refrigerate for 30 minutes.
- After marinating, preheat the grill to medium heat. Brush oil over the grate to prevent sticking. Grill the chicken breasts, brushing leftover marinade over them, until an internal temperature of 165°F (74°C) is reached (approximately 6-7 minutes per side, depending on size).
- While the chicken is grilling, heat a large skillet over medium-high heat. Melt butter in the skillet, whisking continuously. Add garlic, Italian seasoning, sun-dried tomato oil, and basil. Cook for 2 minutes.
- Slowly add lemon juice and whisk to combine. Gradually whisk in heavy cream and cook for 3-4 minutes, allowing the sauce to thicken. Remove from heat and set aside.
- Once the chicken is done, remove it from the grill, cover, and allow it to rest for about 5 minutes.
- To serve, place grilled chicken breasts on a dish, topping each with 1/4 of the goat cheese, 1/4 of the sun-dried tomatoes, and fresh basil. Drizzle the lemon butter sauce over the chicken. Serve warm.
Notes
This dish pairs nicely with rice, pasta, quinoa, or potatoes but can also be served on its own.
You can substitute feta cheese or mozzarella cheese if preferred.
If sun-dried tomatoes are unavailable, fresh tomatoes or canned diced tomatoes work as substitutes.
