Description
A fresh and elegant Chicken Caprese made with juicy seared chicken breasts topped with melted mozzarella, ripe tomatoes, fragrant basil, and a sweet drizzle of balsamic glaze.
Ingredients
4 boneless skinless chicken breasts
2 tablespoons olive oil
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
8 ounces fresh mozzarella cheese, sliced
1 cup grape or cherry tomatoes, halved
1/4 cup fresh basil leaves
2 tablespoons balsamic glaze
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts on both sides with Italian seasoning, salt, and black pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the chicken for 5–6 minutes per side until golden brown.
- Top each chicken breast with slices of fresh mozzarella.
- Transfer the skillet to the oven and bake for 12–15 minutes, until the chicken reaches an internal temperature of 165°F and the cheese is melted.
- Remove from the oven and let the chicken rest for a few minutes.
- Top with halved tomatoes, fresh basil leaves, and drizzle with balsamic glaze before serving.
Notes
Fresh mozzarella melts best and gives the creamiest texture.
Add red pepper flakes for a touch of heat.
Pesto can be spread on the chicken before the cheese for extra flavor.
Add fresh basil after cooking for best aroma and color.
