Description

A fresh and elegant Chicken Caprese made with juicy seared chicken breasts topped with melted mozzarella, ripe tomatoes, fragrant basil, and a sweet drizzle of balsamic glaze.


Ingredients

4 boneless skinless chicken breasts

2 tablespoons olive oil

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

8 ounces fresh mozzarella cheese, sliced

1 cup grape or cherry tomatoes, halved

1/4 cup fresh basil leaves

2 tablespoons balsamic glaze


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts on both sides with Italian seasoning, salt, and black pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Sear the chicken for 5–6 minutes per side until golden brown.
  5. Top each chicken breast with slices of fresh mozzarella.
  6. Transfer the skillet to the oven and bake for 12–15 minutes, until the chicken reaches an internal temperature of 165°F and the cheese is melted.
  7. Remove from the oven and let the chicken rest for a few minutes.
  8. Top with halved tomatoes, fresh basil leaves, and drizzle with balsamic glaze before serving.

Notes

Fresh mozzarella melts best and gives the creamiest texture.

Add red pepper flakes for a touch of heat.

Pesto can be spread on the chicken before the cheese for extra flavor.

Add fresh basil after cooking for best aroma and color.
