Ingredients
4 boneless, skinless chicken breasts
Salt and pepper to taste
1 cup all-purpose flour
3 large eggs
¼ cup milk
¼ cup grated Parmesan cheese
¼ cup olive oil
¼ cup unsalted butter
1¼ cups chicken broth
½ cup fresh lemon juice
2 tablespoons chopped fresh parsley
Instructions

Pound chicken breasts to even thickness. Season with salt and pepper.

Place flour in a shallow dish. In another dish, whisk eggs, milk, and Parmesan.

Dredge each chicken breast in flour, then dip in egg mixture.

In a large skillet, heat olive oil over medium-high heat. Cook chicken 3–4 minutes per side until golden. Remove and set aside.
