Description

Ingredients

3 large chicken breasts (cut lengthwise into 6 thinner cutlets)

Salt and pepper (to taste)

1/2 cup flour (for dredging)

2 tablespoons olive oil

2 tablespoons butter

8 oz cremini mushrooms (sliced)

2 cloves garlic (minced)

1/2 cup dry sherry

1 cup heavy cream

6 oz Muenster cheese (or a similar mild melting cheese like Swiss or Gruyère)


Instructions

  • Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or line it with parchment paper.

  • Prepare the chicken: Season the chicken cutlets with salt and pepper, then dredge them in flour. Heat olive oil and butter in a pan over medium heat. Fry the chicken for 2-3 minutes per side until lightly browned. Transfer to the prepared baking dish.

  • Cook the mushrooms: In the same pan, sauté sliced mushrooms for about 4 minutes until softened. Add minced garlic and sauté for another 30 seconds.
