Description
A hearty and flavorful Chicken Pozole made in just 30 minutes! This quick version combines tender shredded chicken, hominy, black beans, and a spiced green chile broth for a comforting meal that’s perfect for busy weeknights.
Ingredients
2 (4-ounce) cans mild diced green chiles, undrained
4 cups chicken stock, divided
2 tablespoons vegetable oil (or olive oil)
2 tablespoons all-purpose flour
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon onion powder
3/4 teaspoon chili powder
Salt and pepper, to taste
1 (15.5-ounce) can golden hominy or 1 1/2 cups frozen corn
1 (15-ounce) can black beans, drained and rinsed
1 dried bay leaf
1 1/2 cups shredded cooked chicken
1/4 cup finely chopped cilantro (optional)
Toppings: tortilla chips, avocado, lime wedges, cilantro, shredded cabbage, radish, crema, cotija cheese, etc.
Instructions
- Blend both cans of diced green chiles (including liquid) with 1 cup of chicken stock until smooth. Set aside.
- In a large pot, heat oil over medium heat. Whisk in flour and spices — cumin, garlic powder, oregano, onion powder, chili powder, salt, and pepper — and cook for 1–2 minutes until fragrant.
- Gradually whisk in the blended chile mixture and cook until slightly thickened.
- Add drained hominy, black beans, remaining chicken stock, and the bay leaf. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Stir in shredded cooked chicken and chopped cilantro, if using. Simmer for 2–3 minutes until heated through.
- Remove bay leaf, adjust seasoning, and serve hot with desired toppings.
Notes
Use rotisserie chicken for a quick shortcut.
For extra spice, add diced jalapeño or use hot green chiles.
Substitute frozen corn for hominy if needed.
Make it vegetarian by using vegetable broth and omitting chicken.
Freeze leftovers for up to 3 months; thaw overnight before reheating.
