Description

A fresh and creamy chicken salad made with tender chicken, crunchy vegetables, sweet fruit, and a smooth, tangy dressing—perfect for quick lunches or light dinners.


Ingredients

4 cups cooked chicken breast, diced or shredded

2 stalks celery, diced

1 medium green apple, diced

1 cup seedless red grapes, halved

1/2 medium red onion, finely diced

2 tablespoons fresh parsley, chopped

1 cup mayonnaise

2 tablespoons lemon juice

1 tablespoon sugar

1 tablespoon Dijon mustard


Instructions

  1. In a large bowl, whisk together the mayonnaise, lemon juice, sugar, and Dijon mustard until smooth and creamy.
  2. Add the cooked chicken, celery, apple, grapes, and red onion to the bowl.
  3. Gently mix until all ingredients are evenly coated with the dressing.
  4. Stir in the chopped parsley.
  5. Serve immediately or refrigerate until chilled.

Notes

Rotisserie chicken works great for convenience.

Add chopped nuts like walnuts or pecans for extra crunch.

Substitute part of the mayonnaise with plain yogurt for a lighter version.
