Description

Ingredients

For the Chicken:
4 bone-in, skinless chicken breasts

1 tablespoon olive oil

1/2 cup chicken broth

1/4 cup white vinegar

2 cloves garlic, minced

1 onion, chopped

1/2 cup water

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

Salt and pepper, to taste

1/2 cup green olives, pitted and sliced

1/4 cup capers, drained

Fresh parsley, chopped (for garnish)


Instructions

1. Sear the Chicken:

  • Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper.

  • Add the chicken breasts to the skillet and cook for 5-6 minutes per side, until golden brown.

  • Remove the chicken from the skillet and set it aside.

2. Sauté Aromatics:

  • In the same skillet, add the minced garlic and chopped onion. Cook for 2-3 minutes, until softened and fragrant.

3. Build the Sauce:

  • Pour in the chicken broth and white vinegar, scraping the bottom of the skillet to release any browned bits.

  • Stir in water, thyme, and rosemary. Bring the mixture to a simmer.

4. Simmer the Chicken:

  • Return the chicken breasts to the skillet, skin-side down. Add the green olives and capers, then cover and cook for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.

5. Final Touches:

  • Remove the chicken from the skillet and let it rest for 5 minutes. Stir the sauce to combine.

  • Pour the sauce over the chicken, garnish with fresh parsley, and serve.

Notes

Add More Veggies: Try adding bell peppers or zucchini for extra flavor and texture.
