Description

This easy Chicken Tikka recipe features tender chicken marinated in a spiced yogurt mixture, grilled or baked to perfection. Ingredients

3 chicken breasts (approx. 500g/17.5 oz), chopped into bite-size chunks

1/2 cup Greek yogurt (or thick natural yogurt, full-fat)

2 cloves garlic, minced

1 tablespoon minced ginger

Juice of half a lemon

1 teaspoon ground coriander

1/2 teaspoon turmeric

1/2 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon mild chili powder

Pinch of cinnamon

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons vegetable oil (for brushing)

2 tablespoons freshly chopped coriander (for garnish)


Instructions

  • Prepare the Marinade:

    • In a bowl, mix together Greek yogurt, garlic, ginger, lemon juice, ground coriander, turmeric, cumin, paprika, chili powder, cinnamon, salt, and pepper.

    • Add the chicken chunks and coat them thoroughly in the marinade. Cover and refrigerate for at least 2–3 hours (overnight for the best flavor).

  • Preheat the Grill or Oven:

    • Preheat the grill to medium-high heat or set the oven to 400°F (200°C).

  • Skewer the Chicken:

    • Thread the marinated chicken onto skewers, ensuring they are evenly spaced. Brush the skewers with vegetable oil.

  • Cook the Chicken:

    • Grill the chicken for 8–10 minutes, turning halfway through, until the chicken is fully cooked and charred on the outside. If baking, place the skewers on a baking sheet and bake for 15–20 minutes, or until cooked through.

  • Serve:

    • Garnish with freshly chopped coriander and serve with rice, chapati, or in a salad.

Notes

Vegetable Add-ins: Add bell peppers or onions to the skewers for extra flavor and color.

Spicy Version: Increase chili powder or add fresh chopped chili for more heat.
