Ingredients
For the Wontons:
½ pound ground chicken
1 tablespoon unseasoned rice vinegar
1 tablespoon soy sauce
1 teaspoon toasted sesame oil
1 clove garlic, minced
1 teaspoon fresh ginger, grated
1 teaspoon light brown sugar
2 green onions, chopped
Wonton wrappers
For the Soup:
4 cups low-sodium chicken broth
2 garlic cloves, minced
1 tablespoon dark soy sauce
1 teaspoon sesame oil
2 green onions, chopped (for garnish)
1–2 baby bok choy, chopped
Instructions

Make the Wontons:

In a bowl, mix the ground chicken, rice vinegar, soy sauce, sesame oil, garlic, ginger, brown sugar, and chopped green onions.

Place a teaspoon of the filling in the center of each wonton wrapper. Wet the edges of the wrapper with a little water, fold it into a triangle, then bring the corners together and seal the edges tightly.

Cook the Soup:

In a large pot, bring the chicken broth, garlic, dark soy sauce, sesame oil, and chopped green onions to a boil.

Add the bok choy and simmer for 2-3 minutes until softened.

In a separate pot, bring water to a boil, then add the wontons. Cook until the wontons float and the dough becomes slightly translucent, about 2 minutes.

Transfer the cooked wontons into the simmering broth.

Notes
