Description
Chipotle Pineapple Bang Bang Chicken Skewers offer a smoky, spicy, and sweet combination of juicy chicken, tangy pineapple, and bold chipotle sauce. Perfect for grilling season!
Ingredients
1 pound boneless, skinless chicken breasts
1 cup fresh pineapple chunks
¼ cup chipotle sauce (or more to taste)
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon ground cumin
Salt and pepper, to taste
Fresh cilantro, for garnish
Skewers (wooden or metal)
Instructions
- Prepare the Marinade: In a bowl, whisk together the chipotle sauce, soy sauce, honey, olive oil, minced garlic, ground cumin, salt, and pepper until fully combined.
- Cut the Chicken: Dice the boneless chicken breasts into bite-sized pieces, roughly 1 inch in size.
- Marinate the Chicken: Place the diced chicken in a resealable plastic bag or a bowl. Pour the marinade over the chicken, ensuring all pieces are evenly coated. Seal the bag or cover the bowl and refrigerate for 30 minutes to an hour for maximum flavor.
- Soak Skewers (if using wooden skewers): If you’re using wooden skewers, soak them in water for at least 20 minutes to prevent burning on the grill.
- Preheat the Grill: Heat the grill to medium-high heat. Lightly oil the grill grates to prevent the skewers from sticking.
- Prepare the Skewers: Thread the marinated chicken pieces and pineapple chunks onto the skewers, alternating between chicken and pineapple for a perfect balance of flavors.
- Grill the Skewers: Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks. Ensure the chicken reaches an internal temperature of 165°F (75°C).
- Garnish: Once grilled, remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh cilantro before serving.
Notes
If you prefer more heat, add extra chipotle sauce or a sprinkle of red pepper flakes.
For a veggie version, include bell peppers, onions, or zucchini on the skewers.
Experiment with other fruits like mango or peaches for a fun twist on the classic pineapple.
If you like a sweet-savory combo, drizzle sweet teriyaki sauce over the skewers after grilling.
