This Chipotle Ranch Grilled Chicken Burrito is loaded with juicy, marinated chicken, creamy chipotle ranch, rice, beans, and melty cheese—all wrapped in a warm, grilled tortilla. A perfect balance of smoky spice and creamy goodness, this burrito is great for meal prep, quick dinners, or casual gatherings.

Ingredients

For the Chicken Marinade:

  • 1 lb chicken breast or thighs
  • 2 tbsp chipotle peppers in adobo sauce (adjust for spice level)
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and pepper, to taste

For the Chipotle Ranch Sauce:

  • ½ cup ranch dressing
  • 1 tbsp pureed chipotle peppers in adobo
  • 1 tsp lemon juice

Other Burrito Ingredients:

  • 4 large flour tortillas
  • 1 cup cooked rice (e.g., cilantro lime rice)
  • ½ cup black beans or pinto beans
  • ½ cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • ½ cup shredded lettuce
  • 1 diced tomato
  • Optional: guacamole, sour cream, salsa

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, mix chipotle peppers, lime juice, olive oil, garlic powder, cumin, smoked paprika, salt, and pepper.
  2. Coat the chicken evenly with the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Step 2: Grill the Chicken

  1. Preheat a grill or grill pan over medium-high heat.
  2. Cook the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  3. Let the chicken rest for 5 minutes, then slice into strips.

Step 3: Prepare the Chipotle Ranch Sauce

  1. In a small bowl, mix ranch dressing, pureed chipotle peppers, and lemon juice.
  2. Taste and adjust spice level if needed.

Step 4: Assemble the Burritos

  1. Warm the tortillas slightly to make them more pliable.
  2. Layer each tortilla with rice, beans, grilled chicken, shredded cheese, lettuce, tomatoes, and a drizzle of chipotle ranch sauce.
  3. Fold in the sides and roll tightly into a burrito.

Step 5: Grill the Burritos

  1. Heat a grill or skillet over medium heat.
  2. Place the rolled burritos seam-side down and cook for 1-2 minutes per side until golden and crispy.

Notes

  • Protein Swap: Use steak, shrimp, or tofu for a different variation.
  • Vegetarian Option: Skip the chicken and add grilled veggies or extra beans.
  • Spice Level: Adjust the amount of chipotle peppers to control the heat.
  • Extra Fillings: Try guacamole, roasted peppers, or pickled jalapeños for more flavor
