Ingredients
1 cup quick oats
1 ripe banana
¼ cup whole raw almonds
2 tbsp unsweetened coconut flakes
1 tbsp shelled hemp seeds
1 tbsp almond butter (or any nut butter)
½ tsp cinnamon
½ cup dark chocolate morsels
Instructions
- Blend the mixture: In a food processor, combine oats, banana, almonds, coconut, hemp seeds, almond butter, and cinnamon. Process until the mixture forms a sticky dough.
- Shape the bites: Line a baking sheet with parchment paper. Using a tablespoon or small scoop, roll the mixture into 1-inch balls and place them on the tray.
- Melt the chocolate: In a double boiler (or microwave in 15-second intervals), melt dark chocolate until smooth.
- Dip and chill: Using a toothpick, dip each oat ball halfway into the melted chocolate and return it to the tray. Chill in the refrigerator for 1 hour until the chocolate sets.
- Store: Keep the bites in an airtight container in the fridge until ready to enjoy.
