Description

Chocolate Covered Strawberry Brownies combine rich, fudgy brownies with a luscious strawberry buttercream frosting, topped with decadent chocolate-dipped strawberries. This indulgent dessert is perfect for special occasions like Valentine’s Day, birthdays, or anytime you’re craving a delightful treat. A perfect mix of chocolate, strawberry, and rich flavors!

Ingredients

For the Brownies:

1 box brownie mix (or homemade brownie batter as per your preferred recipe)

Ingredients required by your chosen brownie mix (typically water, oil, and eggs)

1 cup milk chocolate chips

1/4 cup semi-sweet chocolate chips

For the Strawberry Buttercream Frosting:

1 cup unsalted butter, softened to room temperature

34 cups powdered sugar (confectioners’ sugar)

1 1/4 cups freeze-dried strawberries, crushed into a fine powder

2 tablespoons heavy whipping cream (add more if needed for desired consistency)

1/2 teaspoon vanilla extract

Pinch of salt, to taste

Pink food coloring (optional)

For the Chocolate-Dipped Strawberries:

912 large fresh strawberries, hulled

4 oz quality dark chocolate, finely chopped

Instructions

  1. Prepare the Brownies:

    • Using Boxed Mix: Follow the instructions on the brownie mix package, incorporating the milk chocolate chips into the batter. Bake as directed and allow to cool completely.

    • Homemade Brownies: Prepare your chosen homemade brownie recipe, fold in the milk chocolate chips, and bake in a greased 8×8-inch pan. Let cool to room temperature.

  2. Prepare the Strawberry Buttercream Frosting:

    • In a large mixing bowl, beat the softened butter until creamy.

    • Gradually add powdered sugar, one cup at a time, mixing well after each addition.

    • Add the crushed freeze-dried strawberries, vanilla extract, and salt. Mix until well combined.

    • Add heavy cream, one tablespoon at a time, until frosting reaches a spreadable consistency. If desired, add pink food coloring.

  3. Assemble the Brownies:

    • Once the brownies have cooled, spread an even layer of strawberry buttercream frosting over the top.

    • Refrigerate for at least 30 minutes to firm up the frosting.

  4. Prepare the Chocolate-Dipped Strawberries:

    • Melt the chopped dark chocolate using a double boiler or microwave in 30-second intervals, stirring until smooth.

    • Holding each strawberry by the stem, dip it into the melted chocolate, allowing excess to drip off.

    • Place dipped strawberries on a parchment-lined tray and refrigerate for about 15 minutes, or until the chocolate sets.

  5. Serve:

    • Once the chocolate on the strawberries has set, arrange them on top of the frosted brownies.

    • Slice and enjoy!

Notes

Fruit Options: Use raspberries or cherries for a different flavor profile.

Nutty Addition: Add chopped walnuts or pecans to the brownie batter for extra texture.

Ganache Drizzle: Drizzle the brownies with chocolate ganache for an extra layer of richness.
