Description
Chopped Salad Pizza combines a crispy, cheesy pizza crust with a fresh, vibrant salad topping. Topped with veggies, tangy dressing, and optional protein, this fun twist on pizza is healthy and delicious.
Ingredients
1 pizza dough (store-bought or homemade)
1 tablespoon olive oil (for brushing the crust)
1 cup shredded mozzarella cheese
½ cup crumbled feta cheese (optional)
½ cup cherry tomatoes, halved
¼ red onion, thinly sliced
¼ cup black olives, pitted and sliced (optional)
½ cup cucumber, diced
½ cup bell peppers (red, yellow, or green), diced
¼ cup fresh basil, chopped (optional)
2 cups mixed greens (such as arugula, spinach, or romaine)
¼ cup red cabbage, shredded (optional)
½ avocado, diced
2 tablespoons olive oil (for salad)
1 teaspoon Dijon mustard (optional)
Salt and pepper to taste
Instructions
- Preheat oven to 475°F (245°C) for homemade dough or according to the pizza dough package instructions. Roll out dough to desired size and transfer to a parchment-lined baking sheet or pizza stone.
- Brush the pizza crust with olive oil and bake for 8-10 minutes or until golden and crispy.
- Sprinkle shredded mozzarella over the baked crust, add feta if using, and return to the oven for another 5-7 minutes until the cheese melts and is bubbly.
- While the pizza bakes, prepare the salad by tossing mixed greens, red cabbage (if using), avocado, and any additional veggies. Whisk together olive oil, Dijon mustard (optional), salt, and pepper for the dressing and toss over the salad.
- Once the pizza is baked, top it with the dressed salad mixture, followed by cherry tomatoes, red onion, cucumber, bell peppers, olives, and fresh basil. Serve immediately while the crust is still warm.
Notes
Store leftover pizza in an airtight container, keeping the salad topping separate. Store salad for up to 1 day in the fridge.
For gluten-free, use a gluten-free pizza crust.
Feel free to customize the salad topping with additional veggies like radishes, shredded carrots, or zucchini.
