Colorful Popcorn Bars are a quick and festive no-bake treat made with fluffy popcorn, gooey marshmallows, crunchy candy, sweet drizzle, and bright sprinkles. Perfect for parties and celebrations, they come together in minutes and are easy to customize for any occasion.
Ingredients
10 ounces mini marshmallows
4 tablespoons butter
6 cups plain popped popcorn (unpopped kernels removed)
1 cup Easter egg candy
¼ cup sprinkles, divided
½ cup candy melts (optional, pastel colors)
Assorted Easter candies for decoration
Instructions
- Spray a 9 x 13-inch pan with cooking spray and line with parchment paper for easy removal.
- In a microwave-safe bowl, combine marshmallows and butter. Microwave on high for 2 minutes, then stir until melted. If needed, continue microwaving in 30–45 second intervals until smooth.
- Stir in the candy and all but 1 tablespoon of the sprinkles.
- Gently fold in the popcorn until evenly coated.
- Press the mixture evenly into the prepared pan, lightly greasing hands if necessary to prevent sticking.
- Melt the candy melts in the microwave in short intervals, stirring until smooth.
- Drizzle the melted candy over the popcorn mixture.
- While the drizzle is still soft, sprinkle the remaining sprinkles and add extra candies for decoration.
- Allow the topping to harden, then cut into 12 bars and serve.
Notes
Lightly butter or oil hands before pressing the mixture into the pan to prevent sticking.
Do not overheat the marshmallows, as this can cause the bars to become hard.
Use plain microwave popcorn if desired, removing unpopped kernels.
For a vegan version, use plant-based butter, vegan marshmallows, and dairy-free candy.
Store in an airtight container at room temperature for up to 5 days.
These bars are best enjoyed fresh and are not recommended for freezing.
