Ingredients
1 cup couscous
1 ¼ cups vegetable broth (or water)
1 cup cherry tomatoes, halved
1 cucumber, diced
½ red bell pepper, diced
½ yellow bell pepper, diced
¼ red onion, finely chopped
1 cup fresh parsley, chopped
½ cup feta cheese, crumbled (optional)
¼ cup olive oil
2 tablespoons lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
- Prepare the Couscous: In a medium saucepan, bring vegetable broth to a boil. Add couscous, cover, and remove from heat. Let it sit for about 5 minutes to absorb the liquid.
- Fluff the Couscous: After 5 minutes, uncover the pot and use a fork to fluff the couscous. Let it cool for a few minutes.
- Chop the Vegetables: While the couscous is cooling, chop the cherry tomatoes, cucumber, bell peppers, and red onion.
- Mix the Dressing: In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper until combined.
- Combine the Ingredients: In a large mixing bowl, combine cooled couscous, chopped vegetables, parsley, and feta (if using).
- Add the Dressing: Pour the dressing over the salad and toss well to combine.
- Taste and Adjust: Taste and adjust seasoning, adding more salt, pepper, or lemon juice as needed.
- Chill: For best flavor, cover the salad and refrigerate for at least 30 minutes.
- Serve: Toss again before serving and enjoy!

For a vegan version, omit the feta or use a plant-based cheese alternative.
