Ingredients

  • 8 slices thick-cut bread (like brioche or challah)
  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter, for cooking
  • 2 cups fresh or frozen blackberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions

  1. In a small bowl, mix the softened cream cheese and powdered sugar until smooth.
  2. Spread the cream cheese mixture onto four slices of bread, then top with the remaining slices to form sandwiches.
  3. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.
  4. Dip each sandwich into the egg mixture, coating both sides thoroughly.
  5. Heat butter in a large skillet over medium heat. Cook the stuffed sandwiches for 2-3 minutes per side, or until golden brown and cooked through.
  6. Meanwhile, prepare the blackberry compote: in a small saucepan, combine blackberries, sugar, and lemon juice over medium heat.
  7. Cook until berries begin to break down, about 5 minutes. Stir in the cornstarch slurry and cook for another 1-2 minutes until thickened.
  8. Serve the warm French toast topped with generous spoonfuls of blackberry compote.
