Description

A quick, creamy, and flavorful broccoli salad with a tangy dressing, dried cranberries, sunflower seeds, and red onion. It’s a refreshing side dish that’s perfect for any occasion.


Ingredients

4 cups fresh broccoli florets

1/2 cup red onion, thinly sliced

1/2 cup dried cranberries

1/3 cup sunflower seeds

1/2 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon honey


Instructions

  1. Wash and cut the broccoli into bite-sized florets. Slice the red onion thinly and measure out the dried cranberries and sunflower seeds.
  2. In a small bowl, whisk together the mayonnaise, apple cider vinegar, and honey until smooth and well combined.
  3. In a large mixing bowl, combine the broccoli, red onion, cranberries, and sunflower seeds. Pour the dressing over the salad and toss until everything is well coated.
  4. Cover with plastic wrap or transfer the salad to an airtight container and refrigerate for at least 1 hour to allow the flavors to meld. Stir gently before serving.

Notes

 

Substitute sunflower seeds with chopped walnuts or almonds for added texture.

For a sweeter touch, add chopped apples or grapes.

Make it vegan by using a vegan mayo alternative and maple syrup instead of honey.
