Ingredients
8 oz cavatappi noodles (or pasta of choice)
1 tbsp butter (or vegan butter/olive oil for dairy-free)
1/2 yellow onion, finely diced
3 cloves garlic, minced
1 cup plain unsweetened dairy-free creamer (or regular milk)
1/4 cup cream cheese (dairy-free or regular)
1/4 cup low sodium vegetable broth
Salt and pepper to taste
Parmesan cheese (or vegan parmesan) for serving
Instructions
- Bring a large pot of salted water to a boil. Cook cavatappi noodles according to package instructions. Drain and set aside.
- In a large skillet over medium heat, melt the butter. Add the diced onion and minced garlic. Cook for about 5 minutes, stirring occasionally, until fragrant and softened.
- Add a splash of vegetable broth and let it reduce slightly for about 3 minutes.
- Reduce the heat to low and stir in the dairy-free creamer, cream cheese, vegetable broth, salt, and pepper. Let the sauce simmer for about 5 minutes, stirring until it thickens.
- Add the cooked pasta to the sauce and stir until evenly coated.
- Serve hot, topped with Parmesan cheese or vegan Parmesan.
